A couple and one dog
Rudy's Brewing Co. is an independent kombucha brewery in Kuldīga, founded by a couple and a dog named Rudy in 2019.
We had a dream and ambition to start our own kombucha business in Europe. While experimenting at home in a 10-litre plastic bucket in the walk-in closet, we could not have imagined how things would change in a year. We managed to create a brand and name it after our beloved pet, Rudy the dachshund, who became famous in Latvia and abroad. This is even more inspiring for us to develop new ideas and product consciousness that have not yet been invented.
A naturally fermented drink
We don't like sour and vinegary kombucha. Our experience with the fermentation process and careful approach to recipe development has helped us create superior quality products with rich and bold flavours distinct from anything else on the market today.
Fermentation has been known to humankind for thousands of years, but only today does experience and technology make it possible to brew a drink that keeps its living cultures, its fruit and its taste all the way to the can.
Only pure and natural ingredients
We produce what we love ourselves. That's why we use only pure ingredients, free of flavourings and flavour enhancers. We crush the fruits and berries ourselves and use only fresh basil and mint leaves grown by farmers.
We don't use big factory production techniques or sales tricks. We are not trying to lower production costs. Our goal is a clean product.
All the goodness inside

Unpasteurised, no preservatives
We don't pasteurise or add preservatives, so the living cultures from the ferment are still in the can when you open it.

No added sugar
Sugar-free kombucha. A year of experimenting produced an innovative product with less than 15 calories per 100 ml - and it stores for a year without a fridge.

Aluminium cans
We love our planet. A can is completely recyclable and takes far less energy to recycle than glass. An empty can weighs 11 g against a bottle's 250 g, and a pallet carries 7,200 cans against 3,500 bottles - much less CO₂ in transport.

Carbon neutral
We are the first kombucha producer in Europe striving to become carbon neutral. We've reduced used CO₂ to almost zero and use only natural kombucha carbonation. We plant trees, too.
Certified and checked

Kosher certified
Certified by BIR (Badatz Igud Rabbonim, Manchester): the ingredients and the production process at our brewery in Kuldīga.
Vegan
Water, tea, a living culture, fruit, plant fibre and sweetener. Nothing in the can comes from an animal.
Gluten free
No cereal, no malt. The fibres come from maize and chicory.
Charity
Who says charity is only affordable to big companies? We donate a few cents from every can to the clinic and animal shelter, because each of us can help those in need.
